Bio

I teach courses in the Food and Nutrition discipline. Recently taught courses include Advanced Nutrition, Pathophysiology, Vitamins metabolism, Research Methods, Community Nutrition, Food Science, Food Safety, Food and Culture, and Nutrition for Health (Introductory Nutrition). I strive to enhancement students’ academic experiences through study abroad and global nutrition work.

My academic preparation is in multiple Food and Nutrition areas, including Public Health Nutrition, Clinical Nutrition, Food Science and Technology, and Food & Social Factors of Nutrition. My research interests are driven by need of the moment and include clinical nutrition intervention trials, nutritional assessment of population groups, nutrient analysis of foods, sensory evaluation of food products, food adulteration, and food in emergency & humanitarian crisis.

I cherish the fact that I was the Co-Principal Investigator of the landmark national clinical research trial that resulted in the introduction of iodized salt in Ghana. This intervention has alleviated many iodine deficiency disorders (IDDs), including deaf, mutism, infantile cretinism, growth failure and brain damage in children, and infertility, depressed mental capacity, cancer and goiter in adults.

I am motivated to impart nutrition knowledge to students and the public because I feel, in addition to academic credits, nutrition knowledge is essential to good health. A healthy nation is a prosperous one.

Best Advice for Students

All subjects are equally important. Study all subjects with equal zeal because they may make the difference in your future profession. Even within the same discipline, so-called “ordinary contents” may make the difference between success and failure in a profession. Be culturally competent and be able to delineate fact from misinformation. You will be very busy but with good time management, you can make it.
